Is there anyway to secure MailEnable with a login so that other people with access to the server won't be able to access and read emails via the admin console?

how about letting NT do it...try setting the security permissions on the MailEnable.msc file to allow only the users that you want to access the ME admin console.

you might also look at doing the same with the postoffices folder to keep people from poking around the postoffice too.

Just make sure if you used shared folders with multiple servers that you allow permissions to the other server to alter the files, otherwise, You'll have a nice mess.
