Hosting MailEnable on Amazon EC2 Instance

We are looking to move our MailEnable server from a dedicated server, to a Amazon EC2 instance. I've installed MailEnable fine on our EC2 instance. I've got a couple of questions, I hope can be answered;

(1) When going through the installation I was asked to specify the domain name (typically the company/website) operating the MailEnable service. Unfortunately the domain at the moment, will need to remain on our dedicated server, since we have other dependant services running, so it can't be moved at present. Therefore, I can use another domain name, and change it to the correct one at a later date.

(2) On installation it asked to specify DNS servers. We will only be using MailEnable for POP/IMAP retrieval. Outgoing mail (SMTP) will be provided by a company offering a managed mail filtering service. Therefore are the DNS server settings required.
