You do not want to use that feature. (I wished ME would remove it.) Almost all the major viruses today "spoof" the senders address so replying to the sender is really trageting the wrong person.

Any admin enabling that feature on any mail/av configuration is a bad admin. ;)

Open the MailEnable MMC and go to the properties of the SMTP Connection. Click the outbound binding and change he IP. Stop and start the SMTP service.

The latest viruses use encrypted or password protected ZIP files. No AV scanner can handle those. You are better off stripping all zip attachements.

Helm can do that. Helm can do single/stand alone servers or can work is a distributed environment where websites are on one server and SQL is on another and ME is on its own server.
