It is not possible to migrate EAS licensing by domain.
I think the best option is to run the new server in 30 day eval and then copy the license folder (....\Mail Enable\Config\Licensing\MailEnable ActiveSync) over once the last domain comes across.

This is a limitation of the EAS protocol. It does not support personal/server-side groups.
I think some devices (Samsung) provide the experience by linking client side groups to server items (but Outlook does not provide this).
