MailEnable references the IP of my Firewall, not the server it's on

MailEnable references the IP of my Firewall, not the server it's on

I've been playing with MailEnable standard as I believe the professional one will suit their needs but need to get my head around it first.
It's set up on a server in my DMZ. The server has a static internal IP, and the firewall translates that to a static external IP.
I also have a MS Exchange Server on the same DMZ for our use (believe me I wish I didn't).

I have SPF records set up for both servers.

If I send an email, from an IMAP client not on our network via my account on the MailEnable server it:
- is accepted by GMail.com no problems.
- Goes into Spam on Outlook.com (still need to figure that out, but don't really trust Outlook anyway)
- Goes into Spam on our internal Exchange.

When I check the message headers for our Exchange I can see that the "Received" from my MailEnable server has its name, but the IP of my Firewall and I don't have a clue why.

Can anyone provide some ideas?
