The received header written by MailEnable (standard edition 10.43) looks like this:
Received: from mail.mailenable.com ([216.157.35.200]) by redacted.com with
MailEnable ESMTP; Fri, 9 Dec 2022 12:07:53 -0500
Notice that this header does not say who the email was FOR.
A typical received header from any other mail system that I have checked show who the email was for (the envelope rcpt-to).
Example from google:
Received: from redacted.com (redacted.com. [x.x.x.x])
by mx.google.com with ESMTPS id z11-20020a67d28b000000b003aa179f8c9csi447266vsi.81.2022.12.09.09.07.59
for <redacted@redacted.com>
(version=TLS1_2 cipher=ECDHE-ECDSA-AES128-GCM-SHA256 bits=128/128);

Is this something that can be enabled in a option somewhere?

No, sorry, the headers don't record the envelope recipient to value. It is not available as an option.
