Can you tell me why we can not add any more domains to a specific post office ?
We are using mailenable enterprice 9.60 and have about 500 postoffices.
1 postoffice has at the moment 18 domains associated to it and when I try to add an additional one it will not give me the popup option to add it. In all other postoffices no problem.
Why is there a limit to the amount of domains that can be added ?

You ought to actually set up a post office for each domain. It would work better and no limits.

I have one postoffice that has over 40 domain associated with it. Now when adding another domain, it takes a while for it to populate the dialog popup but have never had it fail.

Like I stated in the previous message, I would recommend that you change it to be 1 domain per post office (or rather a post office equals a domain). You will not experience this issue.
