do I need to have an SSL certificate for every domain? or can I use the same domain for all like we use for webmail?
Please advise. Thank you

You can use one SSL certificate for all postoffices. The clients will need to use the name on the certificate as their pop/imap/smtp host or the y will get a name mis-match warning when they connect. Some clients have an option to "accept all certificates" when configuring the SSL option and this will prevent the mis-match warning.
