Forwarding of E-mails

I have a number of users that forward all e-mails to gmail and other destinations. Is there a method to tell mail enable to send them out AS the user, or is there the ability to disable this option and not forward any emails.

Specifically, we are getting inbound SPAM messages, and then they go back out as the original email sender, then we get on a spam list due to our IP sending spam, but its not from a valid domain. Hence the issue, i either need to change the method of it forwarding, forwarding it as our users e-mail account from or disable all e-mail forwarding.

Go to the MMC, then servers --> localhost --> services and connectors --> Postoffice. At the bottom you can disable all redirections.
